Happy New Year!

We are in for some big changes in 2012! With a house on the market, and a baby on the way, things have certainly gotten interesting around here! There will be some baby talk around here, but I promise no bump pictures or gross details. I have not had any morning sickness or weird cravings, but I am starting to cook a little more with recipes that sound really good to a preggo hostess, so I will be sharing all those goodies here in the months to come!

We did start the New Year off right with a hearty breakfast before we got to work taking down all of the Christmas decorations and tree (sob, sob!).  I used the Easy Poached Eggs recipe and made a little Eggs Benedict:

Ingredients:
Eggs
Proscuitto or Pancetta (I used this time around)
Pepper
Parsley flakes
Hollandaise sauce (ready mix)
Multi-grain English Muffins


Cook the pancetta and eggs according to this recipe, and while those are cooking, make the Hollandaise sauce according to the package directions (usually you just need milk and butter). Toast some English muffins, and top with the egg cups and drizzle with the Hollandaise sauce. Sprinkle on the black pepper and some parsley, and you have an easy breakfast to start the new year off right!
